Ingredients For Egg Roll Recipe:
1. Eggs 4
2. Onions 2 (sliced finely)
3. Garlic (paste) 1 teaspoon
4. Ginger (paste) 1 teaspoon
5. Tomato 1 (finely chopped)
6. Cumin Powder 1 tablespoon
7. Ground pepper 1 tablespoon
8. Green chillies 3 (chopped finely)
9. Peppercorns 6
10. Star Anise 2
11. Cloves 4
12. Cinnamon sticks 2
13. Cardamom 4
14. Coriander leaves
15. Oil 2 tablespoons
16. Butter or Ghee 1 teaspoon
17. Salt as per taste
18. Flour 2 cups
19. Water half cup
Procedure For Egg Roll Recipe:
  • For this easy egg recipe you need to prepare the outer covering that is the roti or paratha. You can do this in advance or together.
  • Kneed the flour with water and flatten it to make flat round rotis.
  • Melt butter or ghee in a shallow pan a and lightly fry both sides of the roti in it. It is now a paratha. Keep it aside.
  • For the egg filling beat the eggs in a bowl. Add salt, a pinch of pepper and half of the chopped green chillies and beat again.
  • Now heat oil in a shallow pan and when it is steaming hot add the peppercorn, cloves, star anise, cinnamon sticks, cardamom and cumin powder. Saute it for half a minute.
  • The add the onions and saute till they are golden brown; add the ginger garlic paste and cookfor a minute.
  • Add the tomatoes and cook till their juice dries out; fry the chillies in it too.
  • Now pour the beaten eggs and scramble it. It will cook in 1 to 2 minutes so don't over cook it.
  • Put the filling in the middle of the paratha and roll it up.
Your egg roll recipe is done. Garnish it with chopped coriander leaves and onion rings.

French fries

Ingrediants:

Potatoes - 5 large peeled and cut into long strips
Salt to taste
Chilli powder - 1 tsp
Oil for Deep frying

Method:

Heat water in a sauce pan and add salt and chilli powder to it. Bring it to a rolling boil.

Now add in the potatoes in this and cook it for 3 mins.

Drain it in a colander and pat it dry.

Heat oil for deep frying over medium heat. Add in the potatoes. Fry it in few batches for 5 mins. Now crank the heat to a high and fry these potatoes  till they turn golden colour.

Drain in a paper towel and Sprinkle with some salt and chilli powder.

 Serve with ketchup.french fries

KFC style fried chicken

Ingredients:
Chicken drumsticks/breast                             8 nos
Beaten egg                                            2nos
Kentucky Fried Chicken 
All purpose flour                                            50 gms
Bread crumps                                                 50 gms
Chilli powder                                                  1 tsp
White pepper powder                                     1 tsp
Onion dried and powdered                              1 tsp
Basil/Thulasi leaves dried and powdered           1 tsp
Oregano/Omam leaves dried and powdered     1 tsp
Green chillies chopped                                      1 no
Garlic dried and powdered                                1 tsp
Ginger dried and powdered                               1 tsp
Salt                                                                   to taste   
Oil                                                                    for frying
                             
Procedure:
1. Wash and clean chicken. Drain water well from chicken.
2. Add beaten egg, curd, 1/2 tsp chilli powder, salt to chicken and mix well. Marinade it for atleast 3 to 4 hrs.
3. Ground all purpose flour,green chillies,white pepper, oregano/omam, garlic, ginger,basil/thulasi, remaining chilli powder,salt.
4. Cover marinated chicken with ground spicy all purpose flour mix and then with bread crumps.
5. Heat oil in a thick bottom kadai and deep fry the chicken in a slow fire till it is cooked.
6. Serve hot with tomato ketchup.

Tomatto Rasam

Ingredients:
Tomatoes - 2
Turmeric Powder - 1/2 teaspoon
Coriander leaves - a few
Green chillies - 2
Garlic - 2 cloves
Cumin seeds - 1 teaspoon
Curry leaves - 1 sprig

For the tempering
Ghee/Oil - 1 teaspoon
Mustard seeds - 1/2 teaspoon
Cumin seeds - 1/2 teaspoon
Hing/Asafoetida - 1 pinch
Dried red chillies - 2
Curry leaves few
Black peppercorns - around 10 in number
Salt to taste

Directions
Grind the pepper corns, garlic,green chillies, curry leaves and jeera into a course mixture. Alternatively you could pound this to a coarse paste using a pestle and mortar.

Blanch the tomatoes in boiling water for about five minutes and peel the skin. Run the tomatoes in the mixer/blender to get a thick tomato mixture. Add the hot water used for blanching the tomatoes, turmeric powder and salt to this tomato mixture.

Do the tempering using all the ingredients listed. Once the mustard and jeera start spluttering, add the coarse ground dry mixture and fry for a minute. Take care it does not burn.

Bring the tomato mixture back to the stove and bring it to a boil. Remove from heat as soon as it boils. Pour the tempering over it and mix well. Adjust salt and garnish with chopped coriander leaves.

Serve with some hot rice!

Chicken Noodles


Ingredients :
2 packets of noodles.
1 cup of shredded chicken.
4-6 cups of water.
1-2 tablespoon of refined groundnut oil/extra virgin olive oil.
1 teaspoon of dark soy sauce.
1 teaspoon of light soy sauce.
1 teaspoon of Chinese rice wine/sherry.
1 -2 teaspoon of sugar.
Sea salt to taste or you can also use regular salt.
Half teaspoon of Chinese five spice powder ( an inch of cinnamon, 1 star anise, 1 teaspoon each fennel seeds, shichuan pepper and cloves. Dry roast everything and grind it into a fine powder).
1 tablespoon finely chopped garlic.
1 tablespoon finely chopped ginger.
1 finely sliced white onion.
Half cup of finely sliced bell pepper/capsicum.
Half cup of finely slice carrots.
Half cup of finely sliced lettuce/cabbage.
Half cup of bean sprouts.
Half cup of finely chopped spring onion.
Just a handful of coarsely chopped Choy sum ( Bok choy ).
2-3 tablespoons of roughly chopped cilantro.

Directions :
1. Heat the water in a pot to it's boiling point. Add a pinch of sea salt and 1 tsp. of cooking oil to it.
2. Boil the  Noodles in the given quantity of water for 2-3 minutes and quickly discard the hot water. Hold the noodles under cold tap water to stop the cooking process and allow them to cool; This process will help us to get non-sticky noodles. Do not overcook the noodles.
3. Now heat up the groundnut oil in a wok on a high flame. Add the chopped garlic and ginger and quickly saute it. Do not allow the garlic and ginger  to change it's  color . Be careful while you saute  it as the high flame will tend to burn the garlic and will give an intense flavor which will spoil the dish.
4.Add the finely sliced onions, bell pepper, lettuce, carrots and stir fry everything for 2-3 minutes till all the vegetables become crunchy. Do not add any extra water , we need all the vegetables half-cooked.
5. Now add the dark soy sauce, light soy sauce, rice wine, five spice powder, sugar and a pinch of sea salt to the above vegetables and mix everything well for few minutes. Be very careful with the amount of salt as the soy sauce has a lot of salt in it. It will be wise that you taste the dish and then add the salt if required.
3. Lastly, add the cooked noodles, shredded chicken to the above mixture and stir it lightly to prevent  breaking of the noodles. Turn off the flame.
4. Garnish the noodles with chopped spring onions, choy sum , bean sprouts and cilantro ; give it a quick stir and  the noodles are ready to serve.
5. This whole recipe requires less than 15 minutes , all you need is a proper preparation. Always keep all the ingredients ready before you cook . As this recipe requires high flame be careful that you cook everything with a great speed.
This is one of the most healthy and delicious Noodles Recipes. Make sure that you use all fresh ingredients and low sodium soy sauce to increase the nutritive values of the dish. You can also use extra virgin olive oil instead of groundnut oil.

Lamb brain masala

தேவையான பொருள்கள்:
ஆட்டு மூளை - 2
மிளகாய்தூள் - 1-1/2 ஸ்பூன்
மஞ்சள்தூள் - 1/2 ஸ்பூன்
வெங்காயம் - 1/2 கப்
சோம்பு - 1/2 ஸ்பூன்
எண்ணைய் - 3 ஸ்பூன்
உப்பு - தேவையான அளவு
செய்முறை:
* ஆட்டு மூளை மேல் பகுதியை தண்ணீரில் மெதுவாக கழுவி ஒரு கப் தண்ணீர் விட்டு மூடி வேகவிடவும்.
* அடிக்கடி மூளையைப் புரட்டி போடவேண்டும். இல்லாவிட்டால் அடியில் பிடித்து விடும்.
* மூளை நன்றாக வெந்தபின் இறக்கி ஆறவைத்து துண்டுகளாக நறுக்கி ஒரு பாத்திரத்தில் போட்டு அதோடு மிளகாய்தூள், மஞ்சள்தூள், உப்பை கலந்து மெதுவாக குலுக்கி வைக்கவும்.
* பெரிய வெங்காயத்தை நீளவாக்கில் மெல்லியதாக நறுக்கி வைக்கவும்.
* வாணலியில் அடுப்பில் வைத்து அதில் எண்ணைய் விட்டு காய்ந்தவுடன் நறுக்கிய வெங்காயத்தைப் போடவும்.
* பொன்னிறமாக சிவந்தவுடன் மூளையை இந்த மசாலாவுடன் சேர்த்து மிகவும் மெதுவாக கிளறவேண்டும்.
* நன்றாக சிவந்தவுடன் இறக்கி பறிமாறலாம்.

தேவையான பொருட்கள்:
கன்டன்ஸ்டு மில்க் (அல்லது) மில்க்மெய்ட் - 1 கப்
பால் பவுடர் -  1/4 கப்
கெட்டித் தயிர் - 1 டேபிள் ஸ்பூன்
நெய் - 1 டேபிள் ஸ்பூன்
(கன்டன்ஸ்ட் மில்க்கில் சுகர் இருப்பதால் அதுவே போதுமானது.. தனியாக சுகர் சேர்க்க தேவை இல்லை.)
செய்முறை:
ஒரு வாய் அகன்ற பாத்திரத்தில் மேற்சொன்ன அனைத்து பொருட்களையும் கலந்து, மைக்ரோவேவ் ஓவனில் ஒரு 4 - 6 நிமிடங்கள் வைக்கவும்.
இடை இடையே வெளியில் எடுத்து நன்கு கலந்து திரும்ப வைக்கவும்.
6 அல்லது 7 நிமிடங்களில்...சூடான...சுவையான... பால்கோவா தயார்..!!
